Before you begin, warm up the broiler. This is the most important step, because you want your environment ready for the food. Take the wings from the packages and put them into the ziploc bag. Liberally add the bottle of hot sauce. Close the bag and for the next 10 minutes, knead, and toss the wings until all of them have a slight coating of hot sauce.
Empty the bag into the roasting dish. Make sure all surfaces are coated well. Pour the remaining sauce from the bag onto the wings. Next, arrange all the wings on the broiler pan. Slide into your already hot broiler, and let them broil for 15 minutes.
While the wings are broiling, wash out the roasting pan with a good detergent and dry well. RAW CHICKEN CARRIES GERMS, I don't want you getting sick. Throw the ziploc bag away.
Take 1 bottle of bbq sauce and spread it all on the bottom of the pan. Now remove the wings from the broiler, readjust temp of the oven to 400 and place the wings on the bottom of the roasting pan. You might want to roll the wings in sauce as you place them into the pan. If they don't all fit into the pan, you can add a second pan, just make sure to sauce the bottom.
Once you have the wings in the pans spread the 2nd bottle of sauce over the wings, but you might not have to use all of it, so use your own judgement. But bear in mind, there is no such thing as too much bbq sauce, so lay it on thick.
Bake for 30 minutes checking every so often so they don't burn. Turn them over at your discretion. Serve with liberal amounts of bleu cheese dressing, and celery. You can also serve crumbled gorgonzola cheese on the side as well.
